Cucumber Yogurt

Whoever knows me knows that I LOVE yogurt! I put yogurt on my sour cream and onion chips, I use yogurt in my rice, and pretty much I dip it in all my chicken. Here is a recipe for cucumber raita or cucumber yogurt! This can be a nice refreshing snack or a dip for a chicken dish. Yum! Oh yeah…. and its EXTREMELY easy too! 🙂

Don’t you love when you have all the ingredients to a recipe at home? For the yogurt, you have three options. 1. Use Greek yogurt for thick yogurt. 2. You can make Greek yogurt on your own by placing plain yogurt in a strainer with a bowl underneath in the fridge for a couple of hours. 3. Just use plain yogurt but know that it may be a bit thin (but still delicious)! The rest of the ingredients are lemon juice, salt, sugar, cucumber, and mint.
CucumberYogurt2 Peel and thinly slice the cucumbers. Mix all the ingredients together and cover and place in fridge for a couple of hours but preferably overnight.

Cucumber Yogurt or Cucumber Raita

Ingredients:
-2 cucumbers
-2 cups Greek yogurt (or plain yogurt)
-3 Tablespoons lemon juice
-2 Tablespoons chopped mint
-1/2 teaspoonful sugar
-1/2 teaspoonful salt
-Peel and thinly slice cucumbers.
-Combine all ingredients in a bowl and cover and refridgerate for a couple of hours but preferably overnight.
-Enjoy!
*Note- if you don’t have Greek yogurt and want thick yogurt, you can make your own Greek yogurt by placing your plain yogurt in a strainer for a couple of hours in the fridge and let the liquid drain out. Who knew making Greek yogurt was so easy also! 🙂
